Today I am the BIG 34! WAHHH I'm getting older, but life is getting better. Good trade off I suppose. I woke up to a million Happy Birthday text.(ok maybe not a million!) lol My son made me a cake and we our going out as a family tonight to celebrate. On the 4th I will be with my inlaws celebrating the holiday and my birthday yay My classmates also have something planned for me next week, so im kinda getting 3 birthdays. And I'm not complaining. Well thought I would share with you all my joy! Ciao for now ME

Bacon Cheddar stuffed Burgers and Apple pie

For Father's Day my hubby had to work and he had just worked a double the night before. But with 2hrs sleep he got up on HIS holiday and went to work because that's the type of guy he is. He is a provider for his family and sacrifices a lot so we can have what's needed. Our kids adore him,he is a hands on Dad. Without him I wouldn't be able to go to school to become a RN. I am BLESSED with a man who baths,cooks,feeds,cleans,changes diapers,does homework,takes them to practice,does laundry for his kids. He is a wonderful husband,friend and father to our kids. So the kids and I decided to make him all the food I normally don't because what says I love and appreciate you more than a BURGER LOL My hubby loves gourmet burgers and every once in awhile like every 3months he enjoys one. Seriously I don't think anyone could eat it on a regular basis, its just to much! So I decided to make a Bacon,cheddar stuffed burger with homemade buttermilk onion rings and apple pie (his fav dessert) Here are some pics.If your interested I will be glad to send the recipe :)

My # 1 Graduated

My eldest child just graduated 8th grade. I don't know where time has gone. He is so grown. Now taller than me but I don't want to admit it lol I'm so proud of him for turning into such a good young man. My son is a leader, strong in his opinion, stands up for what's right or those who need help. And he is sweet,kind and gentle when he needs to be. I am happy and nervous for him to start high school, all I keep thinking is where has time gone???? I LOVE my boy and I hope he enjoys this next chapter in his life. He makes his family proud. His graduation almost brought me to tears.He was so handsome in his outfit and it was so special for him to walk the stage with his Grandma on there with him. These are the family moments that create memories. Pretty soon it will be a HS grad then a college, I'm almost afraid to blink!

Awesome Pineapple Cake

For Memoial Day my sil and I decided to make a cake we saw in a magazine. It's a six layer chocolate coconut cake. Literally shaped like a coconut. And it couldn't have come out better. We were alittle nervous at first but we impressed ourselves.Take a look!!!!! oh and YES it was delicious

He was having a party and looked over and just gave the wood and some heinekens! SWEET, thanks again neighbor!

Im Back!

I know its been forever since I have blogged but I'm back! I just finished my hardest semester in my RN program PHEW it was definetly challenging and time consuming. But with the help from my husband, a fabulous babysitter/friend,coffee and my classmates I made it. I see how far I have come and how much more I need to learn. I must say this whole experience is life changing, I feel like this is equivalent to my husbands academy! Really, we train 50% in the hospital and 50% at the school. And nothing could have prepared me for the things I have experienced.I know the classmates that I make this journey with will always be like family to me. We have just 1 more semester left! I'm thrilled and proud of doing this having 3 kids at home. It was a real challenge and I absolutely can't wait for my 4th semester to begin. But for now I will enjoy my kids and family. A couple pics with my Inlaws at Knotts Berry farm from this week. We had soooo much fun. I am happy we were all able to go on a roller coaster as a family. I know my kids will look back on this and just be so happy to have these experiences with their grandparents. I think its a shame not all children have grandparents they are close to, especially if they live near. My kids are really BLESSED. Oh how I've been BAD!!!

Ok so I know I promised I would blog during the summer and I haven't. I have just been enjoying my kids, summer itself! I have had such a good one :) Today is my last day and back to the grind for this mama. Starting my next semester at school in my RN program, dreading it and excited all at the same time. I do love clinical! So my bday was July 1st and I got this cute bike

I spent alot of my summer at SPLASH a water park by my house! Kids and I loved it

Sis is on the right

My sisnlaw has been going thru the academy the last few months. Just recently they were sworn in! We are so proud of her and all her accomplishments. She has had a very successful sports career and now transitioning into law enforcement. I always knew she would make it. With her there is no such thing as failure. Although she is sworn in and is technically a cop she doesn't graduate until a couple of weeks. We are so BLESSED to be a part of her special day. My hubs was so proud of his sis! It was really cute to watch them together :) Here are a few more pics!

I couldn't figure out what to get my father inlaw. Seriously the man has everything! Any tool you can imagine, he isn't a shopper, and doesn't EVER ask for anything. He is super simple and happy with whatever. So he is kinda hard to buy for. He would say things to me like "wanna go for a ride?" I would reply "where" and he would never tell me. SO, I would go sometimes and  it literally was a ride to NOWHERE LOL not like we talked even, well sometimes. And sometimes it was to get a soda or something. I don't have my dad anymore and my father inlaw has really stepped into being someone I can go to. We have had long talks into the wee hours of the night. I respect his opinion even if we don't agree. I mean he is a republican and I'm a democrat. He is mormon, and I'm catholic. But somehow it all works out. He is such a good grandfather to my kids. They are all his little buddies :) Each one has a special and different bond. And my husband loves his pops TONS. So I try really hard to give people things that are of sentimental value. Sometimes that means store bought and sometimes homemade. For this Father's day I wanted to give my father inlaw something he would LOVE and USE! Not some giftcard or tool that would collect dust. I thought of all the things he likes, and gardening came to mind. And then it dawned on me, stepping stones and then I got the bright idea of making them LOL

     I get these bright ideas and they always seem easy. Luckily this wasn't too hard after I did some research and MUCH cheaper than 20buck kits. I wanted all 3 of my kids to make him one. Now I used quikcrete the red bag lol I don't recall the type but it was the fastest drying. Only 1hr! But there are things I would do different the second time around. Like I didn't know there was a difference between concrete and cement. Apparently cement is smoother OH WELL. The concrete wasn't so bad if you really took the time to smooth it out. I bought a 60 pound bag and it made 4 12inch rounds and 1 14inch round. 2 of the 12 in. never made it lol They dried before we could get the stones in! So work fast! Here is a list of things you need:

1 Quikcrete bag of concrete or cement(but it takes longer to cure)
4 12in 1 1/2in thick clear plastic planter saucers (walmarts were 65cents!)
stones
marbles
shells
beach glass whatever you want! (I went to the 99cent store and Michaels)
gloves
5G bucket
water
big wooden mixing spoon

Lay plastic over your working area, arrange the planters where you want them because you can't move them once you pour the cement in. Use a 5 to 1 ratio of cement and water and mix with spoon and wear gloves. The consistency should be of brownie batter.Then pour into the planters. Now we originally waited 10 minutes so the stones wouldn't sink, well since I got the super fast drying cement that was a BAD idea lol so if you get cement that takes longer to cure WAIT to put your decor on. If your impatient like me and buy the fast stuff, which I might add the cement cost me 5 bucks!Start decorating immediately. My kids wore gloves while decorating but for one we put there hands in and we washed them right after. Once they dried you can paint aswell with acrylic if you like just put a clear coat over so it protects it!. Here is our first try but not last in making our own stepping stones. Hope you try this with your kids its really fun.

When we walked down the street to give them to Grandpa he was SUPRISED! And he LOVED them, so did Grandma : ) And to see my kids be so proud to hand them over was priceless! It will be neat as the kids grow for them to see their little hands in Grandpa's garden. They will always be their Grandpa's buddies . I really recommend doing this with your kids, I plan on making more for our own home. xoxo ME

This is the COOLEST Army Tank cake I EVER made!

I was asked to make a cake for my godson who is turning 8. He loves army, so I thought I would make him a cake in the shape of a tank! I didn't think I could do it but I guess I can. I can't even tell you how proud of it I am. So proud the minute I finished I had to share this with YOU! LOL Everything is edible except the soldiers :)

My Girl helping me out! We used 1chocolate boxed cake mix and one yellow. We used green dye and even had the cake a camouflage mix!

I used one 9x13 and one 8x8 square

wiltons food spray in blk and green, hersheys bars fro the tracks and chocolate dipped cookies

I spread chocolate whip one the base and I used my food processor on some oreos for the dirt. This is the FINISHED PRODUCT, I LOVE it!

From the front, I took two oreo cookies and seperated them to make the headlights

I Love this cake and I can't wait to give it to my Godson, if any of you want any info on how to make this for your son, maybe your HERO let me know. I would be happy to share.

Ikea makeover AND my 1st giveaway winner!

I love Ikea, it gives you so many ideas. My baby is 21 months now and I have been struggling with all his toys! I went thru all of them and seperated what was of no interest anymore ex, rattles,links, teething rings. I removed a rocker from his room also. Then I headed out to Ikea to get some organizers. Regular toy boxes just aren't big enough. And if you get something to big the kids never play with the toys on the bottom. UGH so off to Ikea. I ended up with two toy box organizers and a cool chair he can hide in! I love it sooooo much and so does he. My husband was working OT when I went haha good thing too because I can do some damage in that store. I was so excited when I got home I decided I would try to put them together myself. I mean how hard can it be? Well I sure found out! Ikea gives you pictures and they are cartoon like and black and white! Alittle confusing at first but I managed to put them all together myself. I snuck them into the room while the baby slept. It took me 2hrs to put them all together. When my hubby got home at midnight, I told him to kiss the baby LOL he was so suprised to see his room and really liked it! I think he liked it even more that he didn't have to deal with the million screws HAHA but I think this might backfire now that he knows I can do these things : ) Take a look!!!

SO I looked online to see about getting an edible arrangement. And noticed small ones cost like 30 bucks and don't feed many. And as I looked thru the photo gallery I started to think I could make one or try atleast. I did alittle research on the web and went to Micheals and costco for the fruit. The WHOLE thing cost me under $16!!! And I made a BIG bouqet so totally worth it :) I even dipped some strawberries in chocolate. Now Im not saying its perfect but pretty good for my first attempt! What do you think????

Happiness Award!

I know I have been MIA but I took some time off to recoop. I recieved this award from Natalie a fellow PDwife over at Martin Enterprises> I guess its nice to know my blog not only therapeautic for me but actually others read it and enjoy what I have to say. Isn't that a bonus.I don't mean to come of pretentious or portray my life as PERFECT. As it is far from it, BUT I am PERFECTLY HAPPY with it. I will not fret over nonsense, and I enjoy finding the silver lining in anything. There is no use in dwelling on things that I have no control over and simply DON'T matter. Ok so part of me recieving this award is me listing 10 things im happy about, so here we go:

GOD because I am Blessed to wake up every morning. He saw me thru my cancer twice, he is who I turn to for faith. Because HE never leaves me and is always there, GOOD or BAD.
My Husband who I met at 18years old and we are still together. Im so glad we grew together and for the life we created. In August it will be 15yrs for us :) It's a special thing when you can look in your spouses eyes and without saying anything they know what you mean
My 3 BEAUTIFUL babies. Each one of them special,unique and bring so much joy to me. They have changed me for the better. I can't wait to see them grow and prosper.
My InLaws because they took me in, supported me so that the hubs and I could finish school. YES we both got our A.A's and B.A. / B.S.
My family, fight as we may we love each other. My sister is one of the smartest people I know. My Uncle hilarious,My Aunite my adored Gma reincarnated. And my Cousins, who know how to have a good time and have your back...
Music because it is uplifting,motivating, healing. I LOVE to listen to GOOD music, and that is anything that speaks to me.
The Beach, I love those not to sunny days with a cool breeze. The sound of my kids laughter and crashing of the waves, its like heaven on earth.
CHRISTMAS!!!! NO not because of the presents, I love decorating, I LOVE lights on houses.Im kinda obsessed, when we got new grass my hubby didnt want anything on it, I told him well what about the driveway LOL he nixed that Idea.I also do up the inside of my home.Im always sad when its time to take it all down.
Helping people. Whether its helping my friend at her daycare, OY VEY which I did the other day, or making a birthday cake for someone. The smallest things can make the biggest impact on someones life. And I believe it all comes back to you. Hence my professions social work to Rn. : )

Last day of clinicals

Took a few picks of my last day at clinicals! I LOVED that hospital. The staff was really nice, helpful and patient with us students. As part of nurse appreciation week the hospital had an in n out truck come and today was their version of American Idol in the cafeteria, and YES I sang! I figure why not, there were so many people there. My classmates and I were on lunch,they even had judges as simon, paula,ellen and Randy! The hosp director was Simon lol. I didn't even know it but my instructor was there, afterwards she gave me a BIG hug, she was proud :) Did I win uh no, but I love to have fun in life, not take myself to seriously. LIFE is short. ALL I got is a pharm and medsurg final! YAY 1/4th of my journey is done!

****WARNING WORLDS LONGEST POST****Where to start? I always feel like life is speeding by and I'm just trying to keep up. Not like when I stayed home and I could sneak in an hour to blog when the baby slept... I'm almost done with my first semester, we have been at SNF's and now Medsurg mostly Post Op patients.I have given meds and injections. My instructor wont let me give anymore because I have given the most BOO she has to be present when we do them. I usually try to time it right so I have her when its time for them. And all my other classmates need the practice. I'm excited tomm I get to go to the OR, scrub in and everything. I don't know what I will be seeing. It can be as simple as a laproscopic something to open heart! Maybe a hip replacement I heard those are pretty cool to see. I took my last test worth 25% of my grade, only the final left. Last week was HELL, I had to 6pg papers due and two 2pg ones. Then a massive 15 or so page careplan on Diabetic Ketoacidosis. I stood up 40 hrs straight to finish it. My body took all weekend to get back into sync with itself. Don't know how those doctors do it! Well I guess I do lots of coffee and they can fall asleep anywhere super fast and be awake like that! its crazy!!! All the Nurses I work with are great, super supportive. I made it a point to help them whenever so they help me learn. I already know which one I would love to precept with:) Hopefully I get that hospital. But I have managed to slip away a few hours here and there to enjoy some family fun!

We had family from Utah down, we love to meet up with them. Its my husbands Aunt and Uncle and they are the sweetest, calm people to be around! They just had a son come back from a Mission in England! They are Disneyholics and he has been gone 2yrs so he has missed some new stuff. I went to this BIG Etnies,van sale where they were all 25bucks, cool ones too. Saw lots of my city folks there, They were so excited for me to get them some. As anyone knows boys are rough on their shoes! I bought 275 bucks worth PHEW it was hard to send pics back and forth but the cousins were so appreciative!We met up had dinner and the Kids went swimming. We talked family, school and all the stuff going on. LOVE catching up.They had breakfast earlier with the SIL so they already knew some stuff...We miss them and wish they lived closer! The Aunt is such a great person to talk to and the Uncle is just like my hubby. They are very laid back and he has a high tolerance for alot of things.Which is good if your a cop, not like those hot headed ones! Here are a few pics

Oh and Mothers day lets see, my honey took me out on a romantic date to Orangehill http://www.theorangehillrestaurant.com/ view was great! The next day breakfast in bed, homemade gifts from the kids etc. I made Gma some chocolate covered strawberries and got her some tulips her fav. I also made 2 dozen more strawberries that the SIL came over and demolished with my kids!

My school is a big sacrifice for us, and he has been nothing but supportive. He always believes in me, when I doubt myself and am totally overwhelmed, he reminds me one thing at a time. You can do this, you are the smartest woman I know! AWWW I'm gonna cry myself GEESH but I think he is just working on me because I told him he can buy a car or boat when I graduate LOL

So sorry I been MIA!I don't think I have ever neglected my blog this long without out the hubs filling in.As always school is all consuming.I'm now doing my Medsurg rotation and feel like more of a real nurse.I can do injections and give out meds,catheters,sterile wound changes etc....pretty exciting.
Now here is why I'm suffering.Just when I thought I could rest and catch up on the house chores,spending time with my hubby,kids and get ahead of studying BOOM the baby gets sick.Vomiting and diarrhea.The hubs took thurs off so I can go to school and then friday he gets it and my eldest!This Gastroenteritits(stomach flu)was spreading like wildfire.I tried sat morning to lysol and bleach everything and was feeling fine UNTIL breakfast.And then I was hit,our only survivor ky lasted til last night before she puked all over my couches!And not alittle A LOT I have no idea what she ate geesh.so there I was cleaning up best I could before I had to vomit.Being sick blows,being sick with a house full of sick kids and a hubby blows.And being the the mom who wants to fix,help all of them while being sick ahhh its horrible.So today sunday instead of enjoying it I will muster the strength to clean up around here.atleast there are no dishes,we couldn;t eat anything.I will bleach and lysol again and wait on the upholstery guy to come steam my couches!A well spent 50bucks!+n a lighter note the hubs and I had a weigh off on who lost more weight in 1 day.And DRUMROLL.....it was a tie at 7lbs a piece.Hey it might be mostly water weight and I know as soon as I eat regular food it will come back but right now its my silver lining in all this!Lol

MrOfficer and I try our best to squeeze in a date night, especially now with our chaotic schedules. It was my turn to pick and I picked this place actually because the name intrigued me at first and then the menu, YUM. It was also so pretty and romantic, located in a NICE area. My MIL had gone once before,and some city friends go all the time and seem to enjoy it so we gave it a shot! I must say it looked like a european cottage, and I love the fact we got to be fancy smancy. The hub had some heffinweiser from munich and I had apple martini's.Then we had seared Ahi tuna as a appetizer. I had barramundi fish that was panko encrusted and seared in a HEAVENLY sauce, it was served with blue cheese mashed potato and steamed greenbeans. The hubs had lamb in a wine reduction sauce, a sweet potato polenta and greens. , YES he is a brave man. lol We also had the creamed spinach made with maui onions, my fave!For dessert we had creme brulee, with the chefs specialty biscotti. It was such a nice night. Just me and him, lots of flirting and laughter. Dates like this bring us back to when we first met.And I can honestly say the spark is just as HOT! Love you baby!!!!

Seem's like every couple months or so we get a few weeks where we can't keep up with all the parties! Sometimes two on saturday and then sunday ugh.... Not to mention all that gift buying adds up. But to tell you the truth I have been so consumed by school that Im actually welcoming this. I get to enjoy my kids and great company. This past party weekend my SIL actually suprised me and stopped by to take my eldest out. He enjoys her company and she to has been busy on her knew adventure. Here are a couple pics

Wish I got to take a pic of my eldest he was in a water war with the host brother, LOL needles to say him and 20yr olds guess who lost. At one point My boy got distracted by the candy from the pinata and the brother got him with a pitcher. My son fell back and the water was poured all over. He looked like a bug being downed! It was pretty funny. Such a good time, I miss all my friends and just being with the kids. I am so looking forward to the next few weeks and then summer

Inlaws 46th Wedding Anniversary

Yesterday was the Inlaws anniversary but we are celebrating today! I made my Father inlaws favortie dessert, atleast he always seems to want it.Last time I left them it he didn't want to share lol Besides natural sugars and some found in the angel cake its pretty sugar free. BUT everything in moderation right? I have made this before but since I always get request here it is.

Berry Trifle
3 cups any berry combo, I like strawberries(diced), blackberries and raspberries
1 sugar free cool whip tub
1 large box sugar free INSTANT vanilla pudding
1 small can crushed pinapple drained
1 angel food cake
trifle dish

Make the pudding and refridgerate 5min In the mean time dice your strawberries. Then take the pudding when set and mix the whole container of cool whip and the can of crushed pineapple. It will look like this.

Now you can cube or tear the angel cake into bite size pieces what ever you like and place at the bottom of the trifle dish

place enough of the pudding mixture on the cake to cover the whole layer and place half the berries on it

and repeat the layer again starting with angel cake

Then arrange the top berries any way you like!

How easy and delicious is that???? You must try this its the easiest and Best dessert for spring and summer :)

Nick Vujicicis truly inspirational! The things he is capable and puts no limitations on himself is amazing. There are so many bitter and unhappy people, life is short your ATTITUDE is a CHOICE. Be thankful, patient, kind and happy for all your blessings. The one part in the video I LOVE he talks about getting married and says he thought it would never happen, he can't even hold his wife's hand, BUT he thought when the time comes I can hold her heart..... What a different perspective. I try really hard to look on the bright side of life and teach my kids that. There will always be people out there that are unhappy, they will try to spread that to you and others.Gossiping,lying, mean to people, trying to knock down others accomplishments for what???? Perhaps they should focus on themselves and realize life isn't a race or competition, its a journey to learn from. Hi all YUP it's me the long lost MRSOFFICER lol. How I missed you my bloggy friends. Today is the day before my big FINAL yikes. Had my LTC (long term care) eval yesterday. It was great, even got some outstandings in the communication! LOL me good at talking? okay you got me there. And passed my CPE but today is a big day of studying for our final. Im so happy this first 9weeks is done with.This is the hardest and most rewarding profession. I LOVE IT. I already have my next placement and stoked about that. My hubby so nicely suprised me with a plain wht gold band for my clinicals. We aren't allowed jewerly or rings unless they are plain. So Im happy he did that, helps me think of him during the day. Here's my ring,just a simple band for school but I love that he was so thoughtful

The video was cool to watch and I'm going to show it to my son. Just this week he built a catapult for his history class. I'll have my wife post a picture of it. I'm really proud of him and it's cool that his grandpa helped him with cutting the wood. As I write, we are staining it to make it look old and historical. Today was a good day, since it's my friday. The kids are great and Mama is studying hard, and we apologize for not writing any new post. March is always busy, especially when it comes down to me planning my Bishop trip. Also, today was great because I was able to make it down to the Fred Hal'sl Boat and Fishing convention. It's always nice to see the pros at work and teach at the seminars.

Balsamic Vinegar Marinated Steaks and Quinoa Tabbouleh

On Valentines I made these recipes and have had quite a few request for it! I must tell you they are very easy to make. First off I usually make the marinade but this year with all my time contraints I didn't LOL I cheated and it felt very refreshing. I wasn't stressed for time and you know they tasted just as good. Here are my recipes

Steaks

1 Bottle of your favorite Balsamic vinagarette dressing
McCormicks Montreal steak seasoning
salt
pepper
steaks of your choosing

I season the steaks with salt.pepper and McCormicks, I used Tbones why, because they were on sale! Then I put them in a gallon size ziplock bag and poured the whole bottle in it and mixed it up! I did that earlier in the day about 4 hours prior, but really 1 hour will do. Then I cooked them on a grill and saved the marinade. I put the marinade in a sauce pan and cooked til half. Making sure I cooked it long enough to kill any bacteria from being with raw meat and I drizzle over the steaks.

Quinoa Tabbouleh

1 c quinoa cooked according to package
2 Roma or plum tomatoes chopped
1 c chopped scallions
1 c seedless cucumber
1 c chopped italian parsley
1/2 c fresh mint
2 cloves of minced Garlic
2 lemons juiced
2 tbsp olive oil or as needed
salt
pepper

Let Quinoa cool, Add all ingredients to a bowl and toss. Add quinoa and salt and pepper to taste and olive oil as needed to keep quinoa from sticking together

I LOVE mediterranean food, so try this recipe you wont be dissappointed!!!

My hubby had to work Valentine's Day which was a bummer, but thankfully he gets off early. So that day the kids and I went to Michaels and Fresh & Easy to get decor and dinner! I thought it would be nice since he has been such a great helpful hubby lately. He was also getting sick, sore throat and all I couldn't imagine him having to take me out and not be able to enjoy dinner. The kids and I painted a sign, some hearts and hung them up. We also set the table threw rose petals and put a ton of sweets out! We also made a frog box thing we got at Michaels and each kid made Valentines for eachother! It was soooo cute. So here was our menu:

Now most of you know I am pretty much a friday blogger unless the hubby decides to blog for me. So there are some things I have been wanting to share, first two recipes I love making one is a green enchilada casserole the other some Garlic chicken noodles with veggies.**warning these foods are delicious and might not be to healthy haha***

GREEN CHILE-CHICKEN CASSEROLE

4c shredded chicken
1 can green enchilada sauce
1can condensed cream of chicken
1 8 oz container of sour cream
2 can diced green chilies
12 or so tortillas
shredded cheese about two cups

preheat the oven to 350 degrees. Combine chicken, enchildad sauce, soup, sour cream, chilies, in a sauce pan and heat. Take 6 tortillas and place in a platic ziplock bag but dont seal! Now you can fry these slightly by why add the oil? The cheese here is enough alone lol Microwave them for about a minute or until soft and pliable. Now get out a casserole dish i use a 13 x 9. scoop about 1/2 c of the mixture on the bottom.place tortillas in a think row along bottom. About 4. then add about 1/3 the mixture and sprinkle with cheese. repeat these layers and cook for about 25-30 minutes until cheese is melted and sauce is thickened and absorbed by the tortillas. I love to top with fresh avocado slices. This is always a crowd pleaser! ENJOY

Garlic Chicken noodles with veggies

1 16 oz pkg rotini noodles cooked as directed
1/2 chopped onion
4 minced garlic cloves
2 cup cooked cubed chicken
2/3 cup heavy cream
3tbsp parmesan cheese
2cups frozen broccoli
1cup mixed frozen veggies

Place a small amt of EVO in pan and cook onions and garlic until onion is tender. Add the frozen veggies and cook til tender. Add cream and stir til thickened. Add noodles,chicken and parm. Mix and serve!

NOW LAST BUT NOT LEAST, MY FRIEND MADE THESE BEAUTIFUL SCARFS THAT SHE SELLS FOR MY MIL AND FRIENDS. She is quiet the crafty girl, she can make just about anything.If your interested please let me know. She saw them on ETSY and she is much cheaper than any of them. Take a look at her work

Each scarflet attaches at the bottom with a button. She decorated the ends of the scarf with a rose. My MIL LOVED hers!!! These are so cute and keep in place better than a regular scarf. SO let mek now ifyour interested!!!

Is this your life and meaning!

Have you known a person or persons, who go out of their way to try and annoy people? It is really sad and one can only laugh at the prospect of their unhappy life. People who dream of a better life always try to tear down other people, because in their life there is only grief and turmoil. In today's society, these lonely people need psycho treatment and get on with their life, if it is so happy to begin with. Nobody in this world has a perfect life, but you make the best of what you were given. Every marriage has ups and downs, but during these times, only the strongest of people make it through.

The internet is a fairly new realm and law makers are having trouble keeping up with it. Cyberbullying is a real thing and needs to be dealt with swiftly. People who stay at home all day, watch T.V., drink and basically try to come up with schemes to hurt people need a reality check. They must remember everything is recorded forever and shown to important people. What a sad and pathetic so-called-life they must live.

These people in order for their lives to have meaning, will do and say anything to have some kind of importance in life. Why do they do this? I can't answer for them, I only pity them and laugh. My wife and I have a great time reading some of the nonsense, but wonder why their life basically sucks. It is because their family disagrees with them? Do they have a unhappy marriage? Are they known as liars and thieves, so their family and friends decide not to associate with them? Or is it because they have to fake friendships with people, therefore have low self-esteem?

Again, I can't answer these questions. I'am not one of them. So, if you have a person or persons like this in your life, just remember, it's their life and not yours. Be glad your life does not revolve around other people. Just pity them and hope they find their way. Hold on to your family and snuggle them every day.

My father inlaw is truly an awesome man. Not only does he have the devotion to his family,church but he also coaches softball and runs Boyscouts. My son is part of the troup and is well on his way to being an eagle scout within 2yrs! Grandpa takes him camping, hiking and works with him on his skills. One day while having a conversation with my son I ask him "You like hanging out with Grandpa and doing Boyscouts?" He said"yes" I was like" What do you do?" He said "We do all kinds of things, Grandpa is the smartest man I know" my heart swelled, that was so sweet of him to say.He loves his Grandparents so much. He has such a special bond with them. The hubs and I were very young when we had him and lived with his parents for a couple years. I love that he loves their company, that he is so sweet and kind to them. What a special relationship it is when you are close to your grandparents. OKAY back to my father inlaw. He was nominated and chosen to recieve the SILVER BEAVER AWARD WOOHOO! Its the highest honor you can achieve! FIL,MIL,SIL's and the hub's and I will be there. Its suppose to be fancy smancy!:) We couldn't be any happier for you Dad we love and are very proud of you. And like my son we think your a pretty smart man! I appreciate everything you have done for us, our long talks,and hanging out just because. If your not into lifting, it still has funny videos and stories you may enjoy.

I'm actually addicted to the site, since it caters to powerlifting and not bodybuilding. I'm not into the "being ripped" attitude, because it does not serve any purpose for me and well, I love to eat. I spent the majority of my life being the "skinny guy" and it's been eight wonderful years of eat and lift big. A couple of years ago, I showed my wife pictures of me wrestling, playing football and baseball. She actually told me that she would have never dated me in high school, because I was so skinny. We had a good laugh, but playing three sports in high school keeps you thin. Some people wish they had their high school bodies, but not me.

After almost eight years of lifting, I have come to the conclusion that my main focus should be powercleans, bench press, squat and deadlift. Although, I have been blessed with chicken legs (thanks Dad) last month I squatted 495lbs and not the parallel squats, but Olympic style. So, you may not get huge like Ronnie Coleman or Jay Cutler, but you will get stronger.

Furthermore, cardio is also very important. I walk three days a week with "The Lil Bruiser" and play basketball once a week with co-workers. I do cardio for several reasons, but not to lose weight. Who wants to get teased by co-workers when your weezing trying to catch dirty birds? Sorry buddy for putting the oxygen tank in your B&W. Even though I'm not a basketball fan, I must say playing BB works and it gets your endurance up.

The life and times of a kick butt dad

These recent times have been wonderful. My work is booming, my kids are happy and my wife is pursing her dream. I feel bad for my wife, since she has to studying and she believes the youngest is fast becoming a member of team Daddy. I said she is silly, but she needs to study and study hard. I told her it's the part of being a great mom. I believe the kids will see her studying and know that education is important in all walks of life. In these trouble times, it's always nice to know you have your education to fall back on and to be competitive in the job market. I mean, who wants to be stuck in a no-where job?

I think we have a great schedule going on. There is always someone home for the kids and we always have dinner together, which is very important. This is where you ask each one of your family member how their day went and have good laughs.

Being able to spend more time with my kids is a blast and I get to give myself my own honey-do-list on my time-line.

I'm proud of my wife and thank her for giving me this opportunity to be the caretaker for awhile. I think to show her my appreciation I will take her and the kids to Kauai or to Yellowstone in the summer. So, let's hear your input on this.

Bishop fishing trip

Bishop, the fisherman's dream of relaxation. I started to go to Bishop with my eldest son about four years ago. It's a small town off the 395 near Lone Pine and just south of Mammoth. Bishop is surrounded by mountains that are usually covered in snow, but yet it is nice and warm in the valley. It's what you call a father and son trip. We usually leave early friday morning and fish all day. After we finish fishing we clean up and head to dinner. Friday's is the short night since we are tired and go to bed early. On Saturday, we fish all day and it's great. Saturday night is our fun night. We go to dinner and hang out in the motel gathering place with the other 30 people we go with. A few cigars, adult beverages and tons of laugh, while the kids watch T.V. in the rooms.

There is nothing in the world better than watching your son's face when he keeps pulling in trout. I'm glad to be able to teach him the techniques on how to fish. My son always looks forward to this trip because he sees the importance of father and son time. Once my daughter is old enough she will be going as well, since I believe all my children should be a part of this magic.

The fishing gear is quite simple. A few small tackle poles, 1/8 kastmasters, salmon eggs and crickets. It's almost unfair, since we usually pull out 25-30 trout a day. If your lucky you can even catch a 4 pounder which is really good, especially out in the wilderness.

We fish the lower Owens river and its just beautiful. Last year, my son caught a 1 pound German Brown Trout and the look in his face when he caught it is priceless. He makes my heart swell.

So soon we will be heading off with great friends from work and at home with another adventure and future stories to be told.

Foods I'm loving right now

These foods are staples in my house. I know like all mother's we are always looking for healthy snacks and meals to prepare for our family. I thought I would share some of my favorites. I'm thinking I might do this on a regular basis too.Well as time permits lol.

Hummus- Now usually I prepare this myself. Its very simple, white beans,tahini,alittle evo, salt,lime wallah.But because of my time constraints some things are being bought now. I spend one day cooking so that the hubs and kids have good stuff to eat while I'm at school now. If I can fit in the extra stuff like hummus I will. This week was a no, lol I had a test. Anywho hummus is great, you can use it on celery, use it as a dip or cut up some pita and add a tomato, cucumber salad and make it a meal.

Celery- I like it because its crunchy. And because chips aren't found at my home well its one of the subtitutes I use. Again if you can get the little ones to eat it plain woohoo. But if not we have all heard of ants on a log. Use peanut butter, cream cheese or hummus! I love making food fun to get the kids to eat it.

Organic Quinoa- I can't say enough about the stuff. When I don't have brown rice I use this. It is a 100% whole grain food. Its a great source of protein and gluten free. It has all 8 amino acids.I mean its a wonder food. I love mediterranean food. I recently learned to make tabouleh and YUM its wonderful. Use it just like rice.

Laughing cow light Swiss chees wedges-These are great portion controlled cheese. They are 35 calories a wedge with 2.5grams of protein. I love slicing and apple up and spreading one of these on it

B.B.Bakery Energy bars- This is one of my usuals for breakfast when I can't get to my oatmeal. They are sooooo yummy. Filled with fruits and nuts, only using whole wheat everything. They are 216 calories and 36 from fat. That is a great ratio. Not to mention they are dense, and will fill you up. When I eat this before school I am often not hungry at lunch, seriously. So I make myself eat a yogurt for lunch because i'm in class a long time after and I don't wanna be starving an hour into it.

Quaker Whole grain mini rice cakes-Whether you want something sweet or salty these will satisfy. They come in a variety of flavors and are only 70 calories for 9!

Wishbone salad spritzers- are great to pack for a lunch. 1 spray is 1 calorie! They make salad even healthier no more smothering in ranch lol they add the flavor without the fat keeping your salad healthy. The bottle says 10sprays for a cup of salad but often I don't even need that much

Tomato sauce in bulk- This is a big can that cost 3 bucks. When broken down into the usuall small can it comes out to 13 cents a can! That's half the price. I don't know about you but sometimes I don't even need the whole 4 or 8 oz can. That's even more wasteful. So I usually just put 4 oz into a ziplock bag and freeze them. Pulling one out at a time when I need it.

Individual carrot packs- Yes I know, I know I just said tomato sauce in bulk was cheaper. Why would I pay more for these? Well I have puchased the BIG bag at costco and tried to do that but they just didn't seem to stay as fresh, I dont know maybe it was me or something. But for some reason they stay fresh in the mini packs.So some things are worth buying in packs or already fixed as need ex)cheese I hate shredding cheese lol I will spend the extra just to avoid it!

So ladies or gentlemen I hope I have shared with you some useful info. If you have any to share about what your family keeps as staples let me know. I'm always on the lookout for new stuff! My kids are pretty good about trying anything. Even sushi!

Here is one of my latest creations Spaghetti Squash with a chunky tomato sauce yum!

Ingredients:

1lb extra lean ground beef

1/2 c chopped onion

1/2 c chopped green bell pepper

2cloves garlic minced

1c sliced mushrooms

1 14oz can diced tomato undrained

1 8 oz can tomato sauce

2 tbsp tomato paste

1 1/2 tsp dried italian seasoning crushed

pepper

1 3lb spaghetti squash

cook up the beef, onion, pepper,and garlic til brown add all tomato ingredients and italian seasoning. Bring to a boil and then lower and simmer for 15 minutes uncovered.Make sure to stir occasionally

Squash preparation- take the squash and pierce several times with a knife.Place in a microwavable bowl and heat for 10-15 minutes.Let stand for 5 and then cut in half. Scoop out the seeds and use two forks to shred.

Plate the squash and top with sauce!

For this reciped I doubled everything. We are a family of 5 and still had leftovers the next day. YES it was just as delicious. I think I'm going to use this instead of noodles. Its basically all veggies. Even when having noodles I use the Rozini healthy heart whole wheat ones but this I feel is even healthier. My eldest son laughed as his 5 yr old sister ate it up. All she said was "these noodles are small" lol so you know if your kids can't tell its GOOD! And this mommy was happy :) always feels good to pull a fast one, sneaking veggies is one of my favorite things!

Sweet V-Day, My dinner attempts and My Packer Pride!

V-Day is coming and I'm almost done with the plans. I'm so thankful my wife does not expect things, because I like to surprise her. She is happy with anything no matter how big or small the gesture but I love to take care of her and spoil her. I'm glad she not one of those mothers I see at work in the ghetto who sits around all day, has no education, is on welfare, drinks alcohol, ignores the kids and watches the Young and the Restless. Disgusting is it not? Seriously go get your GED or something. I'm proud that my wife is an good example to my kids and wants to educate herself. We have worked out a great schedule and one of us is always with the kids. I'm thinking about retiring when she gets hired and than I can pursue my career as a Pro Bass Angler. AHHHH, maybe not, I love my work too much. We can all dream you know!

Last year it was dinner at the La Opera and a whole row of chocolate covered strawberries from the Rocky Mountain Chocolate Factory and some flowers. I ate most of them though. My partner AKA as my brother, knows both the owner's and we are well taken care of. It's nice to know good people and have connections. I think she will like this place. I can't really name the place only that its in Orange County.YES the cousin always raves about it, so I figure my wife is worth it, she is everything to me. My partner Uncle S we will call him, is a big Italian and loves food, so he tells me all the eateries to go to. I can't spill the beans, she stills comes on her blog every now and then people, but I know I would never take her to some cheesy place in the ghetto.I spend all my time cleaning that place up, I don't need to take my wife there and be on alert. I mean if you have the cash, why not take them somewhere REALLY NICE. A fancy place wear a suit,let her go get all dressed up. I guess it shows how some husbands really feel about their wives. Low down dirty shame. Great movie by the way. Ok, I'm sorry for the rambling.

Last week was great. I was able to take care of the baby and run the house my way. My kids are so full of life and always keep me on my toes. I'm glad I got good hips, otherwise I would look funny limping after them. Alot of officer's get hip problems due to heaviness of belts I suppose. That's why working out is a priority. An overweight cop equals more chance of an injury. My youngest son is so funny and keeps me laughing all day. He is starting to parrot and attempts many words. I'm so jealous of my wife, since she was able to stay home with them, but I'm happy I could afford that lifestyle for her and not have to move out of state away from family and friends.

Ok, so as far as dinner goes. I have made great tasting burgers, homemade chili. spaghetti squash and now a roast.I just learned to use the crockpot. Ok, ok, ok, I have cheated with a little help from the wife, but its the attempt and effort, not the quality right? I'll have the little Mrs post the pics.

Another thing, I hate Kurt Warner, but not in the personal sense, only that he beat my Packers. I'm going to visit Lambeau Field again during next season with friends of mine from work. Its amazing there are Packers fans in my Socal area. It's been ten years since I have been there and by golly its time to go back. I'll go through my time share and secure a spot. Anybody want to go? No Raiders fans allowed.

Hello long lost blog friends! Boy have I missed coming on here and writing up a storm! As you all read earlier the Hubs will be my new guest blogger I'm guessing for the next two years while I finish my program. Let me start by saying I am so BLESSED to have a man like I do. He has done a great job with the kids and trying to keep up the house and dinner. Ofcoarse us women like things done a certain way but I'm not complaining he has done alot more than most men would. I have been meaning to write so many post and since time is limited Im just gonna write one massive one! LOL

How I found out I got in my RN program.

On Dec 15th while celebrating my husbands birthday in Solvang I recieved a phone call from a number I didn't recognize. Because I was with my family at a restaurant I didnt answer. As my hubby took all three of our restless children to the car, I waited for the check to come. Our waitress was super slow, so I decided to call the number back,mind you the call was recieved around 650pm. When I called I got the school and I thought thats wierd and then thought it was my friend calling from their phone and hung up. But then I thought well she has a cell why would she use their phone? So I called back thinking just maybe and ask for the Nursing office and got a answer machine. Which I figured because it was now 7pm.BUT halfway through a lady answered and said "can I help you?" "Yes I said did you call me?" She asked for my name and said "YES I have a spot are you interested?" (ok Im still in the restaurant lol) "I was like yes,yes I am." She said "ok here is the catch we start in 3 weeks! "ahhhh Now anyone that knows about the program knows you need a ton of paper work, BLS cpr certification, immunizations, a physical blah blah. So there I am in the restaurant tears of joy and my poor waitress asking me if im okay LOL I was like yes im okay and very happy! I really didnt expect to get in there were 50 people ahead of me but when a spot opened the secretary was calling people and I was the first person to call back. LUCKY that I even called or thought too.I think it was fate!

My first week

So before my program started I tried my best to organize everything, the house, bills, kids clothes etc....Not to mention get all my stuff ready. I was so anxious my first day of school. The hubby was so cute sending me off. That day we had orientation and it was a HUGE amount of info and totally over whelming. When I left that day I had so many things I needed to get and my hubby worked OT. So there was me and my kids running around buying books,uniforms etc... but it has to be done as we were expected in uniform prepared. By the time I finished getting my stuff it was 10pm. I sent the kids to bed which they normally go at 830pm! poor little guys, and started my homework. 2 1/2 hrs of video and learning outcomes.WOW I was up til 3am only to wake a 6am. BUT I didn't mind. I have been home for 5yrs and all this was exciting something new, I am probably one of the few that love school. When I got home the house was cleaned and my babies were all good. I missed them so much during the day because im so use to being with them. I always wonder if they are ok, eating well, napping etc. but I know they are with daddy so I dont worry to much.And started hmwk all over again. Im pretty much up all night and am thinking McDonalds suger free vanilla iced coffee is my new best friend. My hubby suprised me last night with a rolling crate thing, ALL THE GIRLS HAVE lol I thought to myself I wasnt gonna get one they are so ugly but my teacher told us all we need to have one because of all our books. I have a four day weekend and am gonna use that time wisely. I'm going to clean today and read some. I know aslong as I keep on my reading all will be good.Im also gonna spend sunday cooking casseroles and such for the hubby to heat up during the week. I love him I do but his cooking is something we gotta work on lol.Im also trying really hard to get all my skills right during clinical so that when we go out to our first placement in 5 weeks I got them down. I really love this and I think education is sooo important. I feel like my kids know that because I emphasize it but them seeing mom do school work shows them that its important throughout life. I mean I have my bachelors but so does everyone else. And when I start my new prof. as a nurse I will continue to go to school.Hopefully have my masters that is the plan!

My beautiful wife wanted me to keep up her blog, but I'm unsure as to what to write. I don't have any awesome recipes, only knowledge of what to do or not to do. The beauty of my work is written in black or white, so it makes my decisions easier there. This past week I have been pulling double duty, while the wife is busy pursing her dream. I must say I have a new profound love and respect for her. Working 40 plus hours a week, cleaning the house, caring for a baby and figuring out why I can't match my daughters clothes in the morning, baffles me now. My wife has been a wonderful stay at home mom, so I worry if I can fill her shoes. I have recently began to cook for the family and I sincerely feel sorry for them. I'm limited at what I can cook, I mean seriously, how can I complete with my wife's cooking? I have made a promise to my kids to buckle down and cook some awesome meals, so we will see how it goes.

I sit back now and wonder how she does it. For me, work is easy after almost six years, but being a parent is one of hardest job there is. The constant cleaning, feeding and entertaining them so they don't think your boring is awesome, but tiring. My love for her grows each day and gets stronger when I see her mothering the kids. The way she fusses and worries over them makes my heart swell with love and pride. I'm exicted I get to have my youngest son with me, so that we can hang out and I can snuggle him. I just love his guts and his smile just melts my stress away. I'am truly blessed and honor to have my wife by my side and to put up with my antics. So that being said I'm hoping in the future I will have more time to write, but right now, I'm Mr. Mom.

I have been meaning to blog about this for a couple of days now and I finally have some time now that my baby is napping Phew! The other day I got my mail and it was the same, bills and junk mail. Seriously our poor tree's get slaughtered for mail millions just chuck in the garbage! Ok enough of the soapbox, through all the crap was a shining letter. As I opened it I realized this is from one of my blogging sisters :) AWWW She had got some note cards and thought it would be sweet to mail me one. And it was and totally made my day! It felt so personal and got me thinking how we should all do this! I mean I love my FB,Blog etc... But an actual card just because, well makes a person feel pretty damn special! So Thank You Tina I Loved it!!!!

My son always points out the cornish hens in Costco asking me to make them.I finally gave in and made my family a special meal for New Years Eve! We had herb roasted Cornish hens w/cornbread stuffing, scallop potatoes, corn, and grandmas homemade rolls! For dessert I made little lemon cupcakes with the Express go we got for Christmas. I have been so busy everyday and I feel like a pin cushion to top it off. I gave 5 vials of blood and 3 urine tests lol got the flu shot and H1N1.ugh spent 1500 bucks in a week on stuff and still have a couple grand left to spend. Not on anything fancy either. I have tons of pics of parties I want to post and of family gatherings but dont have time for that either. I had to take a 6 hr class yesterday and didnt eat all day since I had to fast. UGH it was a bummer.I can however tell you I got many new kitchen things that made me happy. A NEW BIGGER kitchenaid mixer aww makes me smile :) my other one will be handed down to a family member. A family size griddle for pancake sunday which the kids are stoked about. lol Now there is no excuse, its nice I can make everyones pancakes at once. And a express go thing. Just used it today to make the kids omelets and they seem to like em? This machine is something my 13yrs old can use. simple and he can learn to make easy things for himself. Also some of those Green tupperware things that keep your food fresh. I have the bags and I love those! And a ton of other stuff. My hubs got me a special gift but that deserves its very own post. here are some pics from my phone that dont take long to upload. Sorry to all I have been neglecting my blog! But I truly have been super busy. We just had our first christmas exchange with my sisnlaws and family. And then I have ours, my families, my Mom and Dad inlaws and my extended family YIKES.On top of all that I have been rushing around trying to get stuff done for my very exciting new venture! NOPE Im not spilling it yet! Soon you won't all be in the dark lol I owe you like 6 blogs on parties we went to etc etc.... there simply is no time unless I forgo sleeping?HMMM NO thats not gonna happen. Im sneaking veggies in my meals one way or another. Sometimes I blend them into the meat and sometimes im lucky enough they will eat them in plain sight! I made teriyaki chicken bowls(my version) the other day and they ate the broccoli right up! All I did was use the Lawrys sesame ginger marinade over 4 chicken breast and baked at 350 for an hour. I steamed some brown rice and broccoli and once the chicken was done cut it up and served :)

And another night I made meatloaf and mashed taters! More comfort on a cold day. I took about 1 1/2lbs ground turkey meat and seasoned with one envelope of liptons onion soup,1 egg ,1/2 cup bread crumbs, mrs dash salt free garlic herb seasoning and pureed celery, carrots, 1 zuchinni(all steamed before). put it in a rectangular casserole dish and put 3 tomato soups and 1/2 cup water over it. Now sometimes I put baby carrots and potato sliced like thick steak fries around it but this time I just made mash potatoes. The tomato soup makes an EXCELLENT gravy. Bake at 350 til done about an hour. And here is a pic

Im loving when I make things and I know they have veggies in them but not the kids! LOL I feel like I pulled one over on them.

Today my eldest child turns 13!!!! I can't believe it. Where has the time gone? I love this boy so much!!!!
We are all going to Disneyland to celebrate. He is the reason my husband and I are successful. Once we had him he gave us the reason to get through it all. He is so smart, handsome and sweet. And no matter how big he gets he will ALWAYS be my baby! Mom's little man.

Solvang,Ostrich Land,AJ Spurs and Great News!

For my husbands 33rd birthday we decided to go to Solvang. Its a Danish community by Santa Barbara Ca. We love it there. I use to go when I was younger and his best friends family lived there for awhile. One year in college I took cultural geography and we had to do a report on small cities that represent a cultural enclave. I chose solvang since I was fairly familiar with it. Ever since then we go every year during the JULESFEST in December. They have a christmas store there that sells nothing but ornaments,pyramids, rings all authentic from Denmark. We go to the church where there in a huge life size viking boat that hangs in the ceiling representing vahalla. We eat ableskivers( these round pancake things) and shop. You can do a carriage ride, and they have outside theater there aswell. Plus right before you get there, there are several farms and wineries. They have a miniature horse farm all of them are 36in or smaller, we got there to late though and they were closed.BOO !A wild mustang farm, but its expensive to go. And an Ostrich and rhea farm. We were able to hit the Ostrich land and the kids had a kick feeding them. They are not friendly and you gotta hold on tight to the bowl or they will get you! We all chose our ornament and had a fantastic time. When we left we ate at AJ Spurs a wild west like restuarant. They had stuffed animals everywhere, it was creepy because they put santa hats on them all. I took so many pics I will definetly share here. I also told the waitress it was the hubs bday and boy did he get embarrassed when they all came out singing. I loved it. And right when we left I got a life changing phone call that made me cry! It was such good news but as to not blow it Im keeping my mouth closed for a couple weeks. I know sorry.....TRUST ME I want to scream it out too. lol.It couldn't have come on a better day! so here are a few pics I hope you all enjoy! xoxoxo

My kids love noodles. And for the ease and economical reasons so do I! I plan a menu out for two weeks. And based on ads and my budget I make my dinners accordingly. If I don't spend my weekly budget then it carries over to the next week or goes to stocking up on any other onsale item. To me thats just being smart. Anywho I plan on writing a blog about a lesson in frugality, but for now I will stick to this noodle recipe.
I cooked up some turkey meat with garlic and onions. Then added half a cup of whipping cream and my favorite classico spaghetti sauce, 3 steamed pureed carrots(thats right I sneak in veggies)
and let simmer for about ten minutes. I put it on top of my rigatoni and yum! I also make homemade rolls BUT tonight NO! LOL I took the tube buttermilk biscuits that you can get 3 for a buck and cut them in half. I rolled out ropes, braided them and baked. I then melt butter with herbs and brush on top. The kids and hubby think they are fantastic. I love simple, easy and economical meals. And I know anything with noodles will be a hit with the kids.Im thinking of chopping up a green bell and mushrooms and throwing that in next time. DO you do anything with Noodles? Im trying all kinds of things with them since the kiddies love them so!

So about every two months my hubs wants chili. Im sure I put the recipe here somewhere? I make homemade beans with it and everything. Usually the hubby likes it straight up in a bowl with all the fixings and the kiddies in bread. Its so warm and yummy just perfect for a rainy day!

Every week the Hub's and I go to a movie. The theatre in the city he works gives FREE passes to LEOs BUT only to their city LEO's.I love it,and so does he. Movies are very expensive especially when you take 5 people. But tonight it was just us. We last saw Twilight the New Moon so this week he picked. UGH and it was NINJA ASSASSINS. THE worst movie ever lol. Ofcoarse he liked it. I mean it was tolerable lol. But its something I would watch if that was the only thing on tv.After the movie we ate dinner at the Roadhouse Grill. I have never eaten there since it just didn't tempt me. And it was okay. I will stick to my Lucille's, ts the BEST. Then we walked around looked at the shops. Stopped to look at the tree, and warm by the outdoor firepit etc. It was a nice evening out. I love out time together laughing, holding hands, the butterflies never go away even after 14yrs!

Fettuccine and Chocolate Chip cookies, because I wanted too!

I wasn't prepared for dinner last night and realizing it was almost 6 and the hubby will be home from his weekly bastketball game I was trying to think fast. I had some heavy whipping cream left from Tday and parmasean so fettuccine it was! Here's my recipe

1/2c butter
1c whipping cream
1 1/2 c parmasean
salt and pepper to taste

Heat the butter and cream over medium heat and stir til butter is melted. When it starts to bubble lower the heat and cook 6 more minutes and stir occassionally. Then add the rest of the ingredients.Cook some fettuccine noodles up and thats it! you can add mushrooms at the beginning or chicken whatever tickles your fancy. This is what you get.

And for dessert some YUMMY homemade Chocolate chip cookies:)

Last night looking to use up some holiday food before its was no good, I took the meatballs we had and simmered them in marinara sauce for 25 minutes. While they cooked I got sourdough rolls and put FRESH mozzarella slices on them(the kind that comes in water)its makes a world of difference and much less salt. I put the oven on 350 and toasted them til the cheese melted. Then I put the meatballs in and sprinkled some parmasean on. The result was a ooey gooey yummy melt in your mouth sub!

As everyone else is busy with the holidays so am I. It's been a crazy week, a baby shower, tons of cooking in preparation for T day and BF! LOL Im so tired and truly need a day to recover. The baby shower is for my good friend who is finally, after three girls having a boy! I made her this super cute diaper cake and some cake pops

The next week was set with me cleaning, moving furniture and cooking for my family to come over for Thanksgiving. Just when I thought I had everything on weds night I discovered I forgot yeast for the homemade rolls I make. AHH I had to go to the store late at night, I know I could have just not made them.BUT if that happened I would have let down alot of people. So to the store I went. And after all was said and done and we were home alone, my auntie,hubs and I quickly cleaned up. And my friend actually left to Walmart at midnight! ahh I left at 230am and was able to hit 6 stores by 9am. I got everything I wanted and don't have to buy for anyone except my hubs, and a couple things for my kids. I try to give each of them 1 big item and then lots of little stuff. I was so happy I actually got everything and didn't have to wait inline thanks to my other half and friend! MY HAIR IS GONE!

SOOOOOOO a few days ago I went to get a haircut. I have been scanning all the latest magazines and finally found one short but not to short. My hubs does not like short hair! lol Now my hair was only a few inches from my waist and I do love it long BUT my baby loves to start touching it all nice and then YANK! So ofcoarse I say "OUCH" and he cries,lol Plus with the holidays and kids I didn't have time to spend on it. My hair is thick and holds water forever.To blow dry it and flat iron or curl your looking at an hour and a half. So needless to say I go to the salon and show her this picture

She starts by cutting a 10inch ponytail followed by 3 more inches of styling.I hear her cutting in the back and razoring the ends.I start seeing hair drop and I remind her I want it to hit my shoulders. She says "YES" just like the pic. Then more and more hair.Next thing you know I feel wind on my neck ahh I tell her "Annie please not short". "Okay" she says and starts with the sides and front. To this ! Nothing like what I showed her. But Annie is not my regular lady. So although Im bummed the cut still accomplishes what I wanted. A short,easy, hairdo. It's cute I have gotten a TON of compliments and in about 6 weeks it will be what I want LOL which is great. SO I guess its like I got two cute haircuts in one! LUCKY ME!!!

So I know I have been neglecting the blog,but right now it feels like there is so much going on.And since I don't want you all to think I have fallen off the face of the earth LOL Im giving you a short SHORT blog. SO every weekend I have had like two parties to go to.And Im trying to gear up for the holidays. ITs hard when you gotta take all three little ones out shopping when you know its not exactly what they want to do. I don't blame them, I would rather be doing something else aswell.Here are some things I have been doing,I had a mini highschool reunion, a baby shower, 3 birthdays,some baking,a date with the hubs(we saw couples retreat totally cute), I got most of my thanksgiving menu done and shopped for.I scored a 22.11oz butterball for 12 bucks WOOHOO, my daughters Thanksgiving feast today,oh a family member moved and needed the hubs and I squeezed in a new haircut. ITs just sooo chaotic right now. But I am reading everyones blogs and commenting here and there. Also I got alittle gift A PIG so not funny because I dont like them. I get the joke but seriously I don't care what acronym you put along with it, calling an LEO that has a negative connotation to it. There is no way to me to change that symbolic meaning to it, just like any other slanderous thing you can call someone, they will always refer to the original intent it was used for. Tonight I decided I want my Nana's fried chicken. But to make it alittle more kid friendly I just did chicken breast sliced into tenders. And fried them ugh Yes fried it just makes the breading sooo crunchy! lol And we don't do it everyday , so not to bad. The breading is easy flour, lawrys seasoning, fresh cracked pepper, sweet paprika, garlic powder and thats it. The trick to getting a good outside is to make sure you have enough oil and that its hot enough. Remember the more chicken you put in the lower the temp. so I ues a large surface area pan.And watch the oil if it gets to hot it will burn the crust and that is NO BUENO! Haha with it I made mashed potato and corn. Served with our favorite restaurants BBQ sauce.YUM

I love Monday its the hubs weekend! He let me sleep in and he got all the kids ready and dropped them off at school. Got the baby up and all ready for the day.WOOHOO what a good guy! Later I went with my friend Christine to the Disneyland cast store.They had all the costumes 75% off they had the cutest alice in wonderland one for 12 .50! It was a 50 buck dress!!! But I had to remind her in December my Auntie gets an additional 40 % off.So everything is a steal.I love the christmas stuff they have. And I make sure to get the hub's utah family stuff, they are Dland lovers:)I got a cute Halloween sign for 3.75, will have to post a pic later.

We then talked about her daughters bday this weekend and her baby shower the following week. She is finally having a boy after 3 girls. Yes from now til christmas Im a shopping maniac and I love it. Later I dropped off some pumpkin bread with my friend Tammy and we talked about a retirement party for a former city council member. He actually was the one that hired me before he was a council member and I use to fill in for his secretary super nice sweet man! He will be greatly missed in the city.And as a suprise the hubs sis dropped off some goodies she made. Looks like mini chocolate muffins with german coconut frosting.

So just been busy running around lately. I will blog later when I get more time. I will be making some cute cake pops that I make for alot of parties I will def have to show you all a pic!Hope you all had a good start to the week.

So this weekend we were full of things to do. Well the kids and I. Daddy was working. SO you all know what we did friday, Saturday we checked out the POW WOW at the Heritage park here. It was so packed and crowded I couldn't take any pics.After that we hit Nordstroms AKA Nordy's lol for their half yearly sale. I had to get a present for my friends daughter.She turned 22, aww to be young again. I have known her since she was 12 so it's crazy to see her grown and to be a momma. Anywho I got her a leather jacket and a necklace, which she loved :) A necklace for her sis crystal because it matched her tattoo and she helps me out so much. I picked myself up a necklace and earrings and some clothes for the kiddies.I love shopping:) Then later that night when the hub's got home we hit TGIF for Brit's bday dinner. It was us, her friends, sis, our old friend Randy who made us laugh non stop with his crazy stories about people. I think I have eaten there 1 other time and its official Im not a fan! After that we ran into some of the hub's fellow LEO'S and were there another hour just talking.Here are some saturday pics.

and alittle later I hit Target now my last post I got alot of Halloween stuff 75% off well sunday it went 90! There were slim pickins BUT I did get full size handsoaps for under 20 cents a bottle woohoo we are hand washing freaks over here and I usually pay 3 bucks a bottle so I bought all I could haha shoot I will cut of the wrapper on the bottle soap is soap! Take a look all this for under 2 bucks

Later that day my cousin and I decided if the mall can putup some christmas decor so can we lol I told her we aren't the mall, but I LOVE xmas. So Im putting my indoor stuff up. Here is a pic of a store with all their trees.Its so pretty why cant we have it up year round?

Today the hubby had AOTC training at the academy. They went over missing persons info, using the taser during different scenarios or on a moving target, using the bean bag gun thing, or that big rubber ball thing. SORRY I do not remember what he called them. Anywho it was nice because he was able to come home for lunch:) That made me happy. Then I hit Target and got 100 bucks worth of stuff for 25, all the halloween stuff was 75% off. My daughters bday is OCT 30th so all the little prizes cups,plates etc... Saved me alot of money.Even our doggie Honey got a costume, a bee get it Honey Bee lol. Later the hubby and I are going on our run. He is in training so we started running together. And ofcoarse its FRIDAY our family night. So here we come Costco for our pizza.And thank goodness I hit the RedBox early and got us some good movies.Tonights feature is ICE AGE 3 return of the Dinosaurs and GI JOE.lol Im actually excited to see GI JOE I know Tatum Channing may be young but not that young lol he is one hottie! So the hubs and I will be happy watching the movie.HOPE YOU ALL HAD A GREAT DAY AND WEEKEND TO COME!!!

Today I made soup for dinner and some rolls. Not only do I still have a cough but I thought it would be a good dinner for the mom inlaw who is recovery from a hip replacement. Actually she told me how to make the soup sometime ago and she learned it from her friend. Its pretty basic but yummy!

WHAT YOU NEED:

2 LARGE CANS CHICKEN STOCK OR BOXED
4C H2O
2 LARGE POTATOES CUBBED
1 ZUCHINNI SLICED
1 YELLOW SQUASH CHOPPED
A CUP OR SO OF BABY CARROTS
1/2 C CHOPPED CELERY
1/4 C DICED ONION
1/2 CUP ROUGH CHOPPED MUSHROOMS
1LB LEAN GROUND BEEF

NOW IF YOU DONT LIKE ANY OF THE VEGGIES FEEL FREE TO MIX IT UP. THIS SOUP WORKS WELL WITH ANY VARIETY.

I use the pot im going to make the soup in and cook up the ground beef and onion,then add h2o and stock. Add all veggies and cook til veggies are cooked.Thats it, sometimes I add more boullion or salt, but I really try to limit the salt intake.And I made some rolls to go along with it YUM!

My sisnlaw is one of the BEST people I know. Besides her many accomplishments in the sport of softball she is genuinely good person. She has great pride, integrity and is a loving, sweet person. Today she is being inducted to her alma mater HALL OF FAME for Fresno State. She has outstanding records there and coached there also. She has 3 GOLD medals and 1 SILVER. For many years I thought it was funny how people reacted to her, in aww and such. She took every photo and signed every autograph for every fan. Never once turning one away. Then one day a few years back we were watching her on ESPN. And I watched and listened to the commentator and was like MrOfficer your sister is really good. To which he said Um Duh! hahaha not that I didn't know but that day I watched her run from center field ,dive to get a catch and pop backup and throw it to second base. Now if that was me I would have dove and thats pretty much it lol when I saw her after that shortly before the Japan olympics they hadn't picked the final team yet,she was the eldest on the team. She worried she wouldn't make it. I looked at her like hello you are the BEST , she has been involved in every play that got them a medal.I told her this is what your meant to do, really , some people have a gift and this was hers.And yes she made the team, OBVIOUSLY. She is very humble, I don't think she realizes her own awesomeness. She has lived a great life and seen many things all over the world. And yet it has not changed her. She still is my hubby's sister that he loves to tease,my kids funny Auntie....She brings them goodies where ever she goes.Which I made her wait to give them. I wanted them to not think when she comes they get gifts. To love her for her. And she respected that and would give it alittle later. Now that there is no more softball in the Olympics BOOOOOOO she is closer. We see her often,and it's great.So Laura we love you and are so very proud of you. If anyone ever needs lessons please email me!

So every year the last couple years I go Black friday shopping. Yes the day after THANKSGIVING sales.BUT I do it with family and friends and we got a system.Its like an undercover operation lol. We have our walkie talkies, a line person and out ads layed out , we make list and divide the store and get everything we want. Now honestly we dont spend oodles and ooodles and its nice to get the cheap price but we just love having a girls night out! We leave about 3 am get a coffee or Hot cocoa and sit and talk.The store we start at opens at 4 am. And this year OLD NAVY is suppose to open at 3! Its so nice.My Auntie was cracking us up!hahahaha We managed to hit 9 stores and we were done by 10am. We GOT EVERYTHING we wanted which was even better. Last year we got our 48 in LCD, that was the biggie:) so here is my favorite black fridayad site. LEFTOVER'S REWORKED!

Last night I made a roast and I always use a larger 3 to 4 lb one so I can make extra meals for the week. Usually I make taquitos. They are easy,tasty and It makes alot of them. Often I freeze the extra's and pull them out and make one or two for the kids to snack on. First I place 6 or 7 in a ziplock bag and microwave them so they are soft to roll. If you dont they will break, so don't forget! Then place a small amount towards the center.

Roll one side over and push close to the meat and roll all the way up.

Place seam side down on the plate and continue til your done.

Guacamole anyone?

I used two large avocados mashed with about 2 tbspsour cream.Add lawrys salt to taste.Cut up one roma tomato,half a red onion and a couple tbsp cilantro. Add a splash of lemon juice to keep it from browning. ENJOY!

And I ate some Blackeberries for dessert! I love when I find these:)

LAST NIGHTS DINNER

So london broil was on sale 1.67 a lb which is pretty good over here. So I ran over to the store and got me a couple. The butcher actually asked how I prepare this because he has tried and its alway tough. I told him I have tried the oven as well and use this cut for grilling or the crockpot. And I proceeded to tell him what I was doing with it. He said oh your a cook, cook. LOL I told him I try.

So here ya go

3.5-4lb london broil (or any other type meat will work!)
1 fajita mix packet
1 onion chopped
1/2 cup each red,yellow and orange peppers

THATS IT!!! you put the peppers in and the onion on the bottom of the crockpot set on high

.Then place the meat on top and pour packet on that.

You dont need liquid the juices from the veggies and meat are enough.Although after I fed the kids I did add a half cup of hot salsa to make it alittle more spicy for the hubs and I.

AND I am a big time crockpot gal, I have a set it and forget it recipebook that is my favorite! BUT I can't stand the clean up. BUT I found some crockpot liners and now Im in love with them. No clean up required!!!!Thought Id share with those who like to cook. Whenever I see products that make my life easier,I tell everyone. I should get paid from these companies lol

ER TRIP AND HOSPITAL VISIT ALL IN ONE NIGHT!

MY POOR SICKY BABY,STILL WITH ER BAND ON :(

So for the last several days my little guy has had a cold. And you all know how wonderful 1yr olds are when they are sick! He is cranky , congested with a major runny nose. He wants only to be held, which I do love to snuggle him but not much else in the house gets accomplished.Yesterday morning he started running a really high fever 101 , that after 3 doses of tylenol only rose to 103 by 7pm..UGH although in my heart I knew it was only a cold when it comes to the kids I would rather be safe than sorry. SO my hubs decided I should stay home and get the other two kids ready for school, i.e. baths, making lunches, reading a story and getting clothes ready and he would go to the ER. They took him in and swabbed him for the swine and flu and thankfully it came back negative. While there they gave him both motrin and tylenol.His fever remained at 102. The doctor's say it just has to run its course and to watch to see if it goes higher and to bring him in if so. Luckily this morning he is still running a fever but not as high. So this is one relieved mom.

After the ER my hubby went to visit his MOMMA in the hospital. Just so happens earlier that day she was taken in to have hip replacement. She has had the other done as well as her knee's. My son calls her the bionic woman lol he said grandma is gonna be so cool like a robot. haha no not neccessarily. She was doing well and all on pain meds which was evident. Mrofficer took a pic with her and sent it to me but I WONT DARE PUT THAT UP HERE LOL THATS JUST SOOOOOO NOT RIGHT. We are exactly our lovely selves while we are in a hospital room ya know. But we were BLESSED twice yesterday ! We hope Gma gets to come home quick! Im making some more goodies and extra food for my Father inlaw. We love living close to them and being able to help. Thats what family is for.

So this Halloween was kinda sad. We had to celebrate minus the hub's. Mrofficer was given mandatory OT BLAH...He tried to get everyone and anyone to work it but no one was having it :( So the kiddies and I had to head out alone. Thank God Auntie Laura and Auntie T got to come along. OHH plus Honey and Benny the dogs lol.The kids were pretty good.The walked the whole way without complaining and fell fast asleep not soon after we got home.My eldest was a man from the blue man group, which most would guess he was DODGER blue, YUCK sorry I am NO Dodger fan, ewwwwww sorry their fans are just sooo DUMB.My personal opinion. My girl was a Devil aka Debal she just wouldn't say it right.And my baby was Nemo.I wore my spartans outfit because hey I paid for it and Im getting my monies worth haha Even our puppy Honey dressed up as a chicken! HAPPY 5TH BIRTHDAY TO MY BABY GIRL KYLIE!

Kylie Maddison was born in the late morning of October 30th, Daddy was in the last month of his Academy. It was a stressful time for him but his TAC officers were great! They gave him the day off and he was able to be by my side the whole time. Kylie was 12 days late! She weighed in at 9 lbs 2oz she was my biggest baby. She just didn't want to come out and we ended up doing an emergency c-section, it was really scary. I love this baby girl so much. She is just the perfect daughter to me. Her smile lights up the room, and she is so spunky. She is definetly a daddy's girl and I wouldn't have it any other way. I loved her small and cherish those memories but I love seeing the person she is becoming. She started kindergarten this year and is just growing leaps and bounds both mentally and physically. Its amazing to see the changes. I can't wait for all the years to come. Happy Birthday Sweetie , Mommy,Daddy and brothers love you so :)

A successful hunting trip!!!!!!!!

This is my sis inlaw Laura and the two deer's she killed! EWWW she is a bambi killer hahaha. So yes we don't know the cuts or how much meat will be sent back, I'm hoping not much!She is also wearing the hub's hunting gear, I don't know how she managed to keep it on,she is so tiny :)
